Serves: 6

Ingredients:

1 c. unsweetened corn

6 tomatoes

½ cucumber

2 avocados

4 TBSP lemon/lime juice

1-2 cloves garlic

2 tsp Fresh mint

1 TBSP fresh coriander

2-3 drops Tabasco

½ tsp salt

 Use fresh corn if possible and scrap it directly from the cob and lightly blanch it.  Chop and puree the tomatoes with a little water, grate the cumber, mash the avocado, crush the garlic, chop the herbs finely and combine all ingredients in a bowl.  Refrigerate for at least an hour.  Serve cool, garnish with extra coriander and mint leafs.
