Apples are one of the top ten healthy foods recommended by the Mayo Clinic. Apples may help to lower cholesterol and glucose levels.  They are also a good source of Vitamin C.

Apple Crumble

Filling:

8 apples, sliced

2/3 C. raisins (optional)

1 tsp. ground cinnamon

1 tsp lemon juice

½ tsp grated fresh gingerroot

Topping:

 2 ½ C. rolled oats

1 ¼ C.  whole wheat flour

½ tsp. salt

½ C. butter

1 2/3 C. honey, brown rice syrup, maple syrup, or date syrup

Heat oven to 375°. Butter an 8-inch square baking dish. 

Mix all the filling ingredients and transfer into baking dish.

Combine the rolled oats flour and salt.  Melt the butter and add the honey/syrup and mix well.  Stir liquid mixture into the oatmeal.  Spoon the topping over the apples.  Bake for 50 minutes.  The filling should be soft but not runny.

Enjoy hot.  It can be eaten as a warm nourishing breakfast on a chilly autumn day.
